Dave, Vanessa here responding to a comment left on my blog. For the music note cake pops you dip the pop, then hold the stem in the melted coating a moment until it stays in place. Another way is to dip the pop and let set, then come back after, dab some melted chocolate on the stem and then hold in place until it stays. I hope that helps. *note* I have found that if you freeze your pops instead of putting them in the fridge the coating cracks. Be sure not to freeze them or make sure to only use the freezer for short periods of time. That might be your problem too.
